BUTTERNUT, SPINACH AND LENTIL LASAGNA

2 small butternuts (approx. 800g each) 2 onions (chopped) 1 carrot (grated) 2 whole tomatoes (chopped) 1 can of quality chopped tomatoes (400g) 3 garlic cloves (finely chopped/crushed) 1 teaspoon of oregano 2 tablespoons balsamic vinegar 200g baby spinach

mozzarella (approx. 100g) parmesan (approx. 60g) 1 hand full of fresh basil (approx. 30g) 1 cup uncooked brown lentils

250g spinach lasagna sheets (whole wheat or regular works too) sunflower seeds

Optional: chili/ chili flakes 400g cottage cheese 100m milk
